Crusoe’s on the Lake is going from strength to strength with the appointment of Head Chef Jayden Cox.
Jayden Cox is a passionate and experienced chef who hails from Sydney’s North Shore. Having refined his craft under Head Chef Jeff Turnbull at North Sydney’s Aqua Dining, Cox brings to Crusoe’s kitchen a very different outlook on food and dining that is refreshing and exciting.
“Aqua Dining is an exquisite restaurant where only the best will do. One day in that kitchen, under Chef (Jeff Turnbull) is the equivalent to a year in any other I’ve worked”, Cox remarks.
“Every dish has so much that goes into it and every ingredient is chosen and prepared with the utmost respect”.
Before working at the 2 Chef Hat establishment, Cox worked at a South African steak and rib grill, serving 500-600 diners on a busy night. Hearty, robust flavours were in every dish and Cox was introduced to many new techniques and spices that now influence his cooking.
So what has attracted Cox to Newcastle? “Crusoe’s on the Lake has huge potential in my opinion and I just couldn’t pass up the opportunity of leading the charge.”
“The location right on the water at Lake Macquarie Yacht Club is the very best in the entire Newcastle Region. You feel like you’re on a boat sitting on that deck!”
“In a venue like this it is important to do those basic pub dishes really well and not play around with them too much, but then to also offer the diners some alternatives that are a little different and exciting -that’s what keeps them coming back.”
The first real opportunity Jayden Cox has to show what he is capable of is a wine matched degustation being held on Wednesday 5th April at Crusoe’s on the Lake. The night will see diners work through 7 courses matched with the premium Finisterre wine range with Darren Jahn of Robert Oatley wines matching the wine with the food and speaking to diners on the night.

So what does the future hold for Crusoe’s under the direction of Jayden Cox? “I’m excited for the future here as we change the menu seasonally so that will keep us all on our toes. I’m almost done with preparing the Winter menu now and it is looking great!”
“One dish I’m really excited about is my Bouillabaisse. I won’t say too much yet, but this winter seafood dish will be our biggest seller and is divine served with a chunk of crusty bread.”
